Cut it in half and scoop out the seeds. Spaghetti squash can be difficult to cut in half, so be patient and use a sharp knife. First, cut the stem off, then stand the squash up with the cut side down. Very carefully cut the squash in half lengthwise. If you find your knife getting stuck turn the squash on its side and use the part you’ve already cut to help guide your knife to finish cutting the squash in half. Once open, use a spoon to scrape out the seeds. Roast the seeds just like you would pumpkin seeds, if you like!
