Fresh Pizza Sauce with Roasted Tomatoes

Ingredients
  

  • 2 lbs tomatoes fresh, cut into quarters
  • 1 Bell Pepper
  • 1 red onion chopped
  • 12 cloves fresh garlic
  • 2 tbsp tomato paste
  • 1 tsp honey
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp Dried Parsley
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • 1/2 tsp rosemary
  • 4 tsp extra virgin olive oil divided into 2 portions

Instructions
 

  • Preheat oven to 375 degrees
  • Cut the tomatoes, onions and bell pepper into equal size chunks

  • In a mixing bowl, add the spices and oils together and mix into a paste. Toss in the chopped veggies and coat well
  • Place the coated veggies onto a baking sheet and put into the oven

  • Roast for about 30 minutes, until browned on the edges

  • Remove from oven and let cool for about 5 minutes
  • In a medium pan, add the remaining oil and heat for 30 seconds
  • Remove from heat and use immediately or refrigerate for about 1 week. Can be frozen too.
