Preheat oven to 375 degrees
Cut the tomatoes, onions and bell pepper into equal size chunks
In a mixing bowl, add the spices and oils together and mix into a paste. Toss in the chopped veggies and coat well
Place the coated veggies onto a baking sheet and put into the oven
Roast for about 30 minutes, until browned on the edges
Remove from oven and let cool for about 5 minutes
In a medium pan, add the remaining oil and heat for 30 seconds
Remove from heat and use immediately or refrigerate for about 1 week. Can be frozen too.
