Cauliflower Crusted Pizza

Spread pizza sauce on top of crust. You can back a little longer if necessary.

Ingredients
  

For the crust

  • 1 head cauliflower cored and chopped
  • 1 egg
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic salt we used Toomey's seasoning

For the topping

  • Fresh pizza sauce with roasted tomatoes
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup grated mozzarella cheese
  • Italian seasoning to taste
  • salt and pepper to taste
  • Any pizza toppings you like salami, olives, onions, green peppers, fresh basil, artichoke hearts, chicken, spinach, roasted red peppers, pineapple, ham, etc.

Instructions
 

Crust

  • Heat oven to 400 degrees. Wash and chop cauliflower in food processor until it resembles rice.
  • Heat in microwave for 2 minutes. Squeeze out excess water in towel or cheesecloth.
  • Mix cooked cauliflower, ½ cup mozzarella cheese, ¼ cup Parmesan cheese, salt and pepper and a sprinkle of Italian seasoning together in a bowl.
  • Spread on parchment papered cookie sheet (or stone) or pizza pan until thin. Bake 7 minutes.

Topping

  • Spread pizza sauce on top of crust. See Fresh Pizza Sauce with Roasted Tomatoes recipe
  • Add toppings, mozzarella cheese and Parmesan cheese on top of sauce.
  • Sprinkle more Italian seasoning. Bake 10 minutes more until cheese melts and is light brown.
