Preheat oven to 350°. Grease & flour a 13x9 pan. Combine apples & sugar and set aside.
Combine dry ingredients in a bowl.
In a large mixing bowl, mix eggs, oil & vanilla. Beat for 1 minute at med-high speed.
Add dry ingredients and apples to egg mixture, alternating, until all ingredients are well combined. Stir in nuts.
Bake 40-50 minutes, until cake tests done with a toothpick or fork.
