Apple Walnut Supreme Cake With Lemon Glaze

Ingredients
  

Cake

  • 4 cups peeled chopped apples
  • 1 3/4 cups sugar
  • 2 eggs
  • 1/2 cup Vegetable oil
  • 2 tsp vanilla
  • 2 cups flour sifted
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 cup chopped walnuts

Lemon Glaze

  • 1 cup confectionary sugar
  • 1 1/2 Tbsp lemon juice
  • 1/2 tsp vanilla
  • 1 Tbsp corn syrup

Instructions
 

Cake

  • Preheat oven to 350°. Grease & flour a 13x9 pan. Combine apples & sugar and set aside.
  • Combine dry ingredients in a bowl.
  • In a large mixing bowl, mix eggs, oil & vanilla. Beat for 1 minute at med-high speed.
  • Add dry ingredients and apples to egg mixture, alternating, until all ingredients are well combined. Stir in nuts.
  • Bake 40-50 minutes, until cake tests done with a toothpick or fork.

Lemon Glaze

  • Blend all ingredients until smooth. Drizzle on top of cooled cake.
