Beet Carrot Celery Salad

Ingredients
2
beets
peeled and boiled until tender
1
carrot
peeled
1
celery stalk
washed
1/4
cup
scallions
chopped
1
tsp
red pepper flakes
1
Tbsp walnuts
chopped
1
tsp
sea salt
2
tsp
olive oil
Juice of ½ a lemon
Instructions
Slice all veggies julienne style then dice into small cubes. Place into a bowl.
Add walnuts, oil, salt, pepper, and lemon juice. Mix and refrigerate at least 15 minutes before serving.
