Beet Carrot Celery Salad

  • 2 beets peeled and boiled until tender
  • 1 carrot peeled
  • 1 celery stalk washed
  • 1/4 cup scallions chopped
  • 1 tsp red pepper flakes
  • 1 Tbsp walnuts chopped
  • 1 tsp sea salt
  • 2 tsp olive oil
  • Juice of ½ a lemon


  • Slice all veggies julienne style then dice into small cubes. Place into a bowl.
  • Add walnuts, oil, salt, pepper, and lemon juice. Mix and refrigerate at least 15 minutes before serving.
