Tomato, Cucumber & Avocado Salad

Servings 3 servings

Ingredients
  

  • 2 cup tomatoes; approx 1 chopped large or small dice
  • 1 large cucumber washed, skin on, and diced
  • 1 large reed avocado diced or two regular sized avocados
  • 1 tbsp cilantro or parsley chopped (optional, you can also use dill weed)
  • 1/2 red onion chopped or diced
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • kosher Salt & black Pepper to taste

Instructions
 

  • For the dressing: In a small bowl, whisk together the lemon juice, olive oil, garlic powder, salt, and black pepper. (Alternatively, place in an airtight container and shake vigorously.)
  • In a large bowl, combine the avocado, tomatoes, and cucumber. Add the optional ingredients of red onions, cilantro, parsley, or dill weed for additional flavor.
  • Pour the dressing over the salad and toss to coat. Serve immediately.
