Tacos Camarón

Fresh salsa, crema, shrimp served in your favorite tortillas. This is how you do Mexican food at home. Courtesy of Chef Michael.

Ingredients
  

Make the salsa...toss together:

  • 4 oz cherry tomatoes quartered
  • 1/4 each Maui onion diced
  • 1 each pasilla pepper diced
  • 1 Tbsp olive oil
  • 1/2 lime juiced
  • 1/2 tsp salt

Make the crema...whisk together:

  • 1/3 cup mayo
  • 1/2 cup sour cream or plain yogurt
  • 1/4 tsp salt
  • 1/4 tsp garlic
  • 1 lime squeezed

Fish

  • 8 oz shrimp peeled with tails off
  • 1 Tbsp olive oil
  • 1/2 tsp each: chipotle, cumin, coriander
  • thinly shaved cabbage for topping
  • sliced avocado for topping
  • tortillas

Instructions
 

  • Marinate shrimp in olive oil, chipotle, cumin & coriander.
  • Sauté shrimp on medium high heat until cooked through.
  • Add to your favorite tortilla, top with cabbage, salsa, crema & avocado. Squeeze fresh lime juice & enjoy!
