Cauliflower Mac & Cheese

Low carb, vegan & amazingly tasty cauliflower mac & cheese!

Ingredients
  

  • 1 head cauliflower broken into florets
  • panko
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika
  • 1 pinch cayenne

Vegan Cheese

  • 1 yukon potato
  • 1 sweet potato
  • 2 garlic cloves
  • 1/4 cup cashews
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/2 chipotle pepper optional spice
  • 1/2 tsp smoked paprika optional to add flavor or spice

Instructions
 

Vegan Cheese

  • Simmer potatoes in salted water till tender, about 10 minutes.
  • Drain & blend in Vitamix with garlic, cashews, vinegar, nutritional yeast, onion powder, salt, olive oil, and water.
  • Blend until smooth. Add chipotle pepper or smoked paprika if desired.

Mac & Cheese

  • After making the cheese, add garlic, salt, smoked paprika & cayenne.
  • Boil cauliflower florets 5 minutes. Drain & put into baking dish.
  • Stir in cheese sauce.
  • Top with panko.
  • Broil 2 minutes until topping is lightly browned.
