Pumpkin Spice Smoothie
Made with a fresh baked pumpkin, this tasty smoothie will make any day a holiday!

- 1/2 each fresh pumpkin personal size (mini)
- 1 each avocado cut in half, seeded
- 4 cups almond milk unsweetened
- 4 tbsp hemp seeds
- 6 each medjool dates
- 4 tbsp pure maple syrup, honey, or agave
- 1 tsp cinnamon
- 1 tbsp turmeric
- 1/2 tsp ginger fresh or powdered
- 1/4 tsp nutmeg
- 8 ice cubes Omit if you want a hot drink. Heat the almond milk prior to blending.
Preheat oven to 350 degrees. Cut top off pumpkin, put back on and place on cookie sheet. Bake 30 minutes till soft
Allow pumpkin to cool and scoop out the seeds. (May be baked the day before. Keep in refrigerator up to 5 days)
Cut pumpkin in half and scrape the flesh out. Put into your Vitamix
Add the almond milk and the rest of the ingredients and blend till smooth. If too thick, add more milk.
Pour into mug or mason jar, add whipping cream and sprinkle with nutmeg. Maybe add a few pomegranate seeds to make it pretty!
