Place chicken, peaches, vinegar, soy sauce, ginger, salt & pepper in the slow cooker, and let marinate for a few minutes while you prepare the veggies.
Slice the onions, & chop the carrots and ginger. Add all the veggies to the slow cooker.
Cook on high for about 2 hours, or low for 4 hours, until chicken is 165° inside and peaches are super soft and falling apart.
When the chicken is almost done, cook the rice.
Take all ingredients out of the slow cooker and top the rice with it. Spoon the juices on top. Chop the chicken & mix everything together to serve.
