What is Tatsoi?

The greens in your farm box this week may look a bit like spinach, but it is actually tatsoi.  What is tatsoi?  Here’s 5 facts so you can distinguish & enjoy it apart from other greens.

  1.  A member of the mustard family tatsoi is also known as spoon mustard, spinach mustard, or rosette bok choy.  The taste is similar to bok choy, and many say superior.
  2. You can use it like spinach and for an extra bonus, the stems are like celery heart (unlike green spinach stems).  It’s great raw and makes a wonderful addition to stir fry or soup.
  3. It contains Phytonutrients.  Phytonutrients are becoming recognized as part of a nutritious diet that promotes long-term health and help to prevent chronic diseases like cancer and heart disease.
  4. It’s native to China & was a common part of the Chinese diet in the 5th century.  Tatsoi is considered an ancient green, and most of the ways it is used in the culinary world came from Japan.
  5. High in calcium, vitamins A, C & K, it has twice as nutritious as bok choy.
