Bang Bang Turkey Salad

Need something fresh, healthy and tasty after the holiday? This fast-assembled salad is nothing more than shredded turkey under a satay-like sauce of peanut butter, chile bean and Chinese vinegar, with some shredded lettuce and chopped cucumbers. From Nigella Lawson

Ingredients
  

For the Bang Bang Sauce

  • 2 tbsp peanut oil
  • 2 tsp sesame oil
  • 3 tbsp smooth peanut butter
  • 2 tbsp Chinese chili bean sauce
  • 1 tbsp sugar
  • 1 tbsp tamari
  • 1 1/2 tbsp Chinese vinegar

For the salad

  • 6 cups lettuce finely shredded
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh mint
  • 3 cups cold turkey shredded
  • 1 each scallion halved and sliced
  • 1 each Persian Cucumber sliced and julienned

Instructions
 

Make the sauce

  • In a small mixing bowl, combine sauce ingredients with 2 tbsp cold water, and mix until smooth. Cover and refrigerate until needed, up to two weeks

Assemble the salad

  • In a small bowl, combine turkey with 4 tablespoons Bang Bang sauce, and toss until well coated.
  • Arrange turkey strips in a rough line down center of salad.
  • Top turkey with scallions and cucumber.
  • Drizzle with more sauce, or place sauce in a bowl to pass at table.
