Plum Crisp with Cashews & Coconut (vegan)

A fruit dessert you can have for breakfast! Best to make with super ripe plums. This is a vegan, no refined sugar recipe that highlights the natural sweetness in the fruit. The natural sourness of the plums complement the light and sweet crumble, while the coconut and cashews give it a delightful crunch.

Ingredients
  

  • 8 plums (peaches or nectarines)
  • 1/2 cup raw cashews
  • 3/4 cup oatmeal
  • 3/4 cup almond flour
  • 1/2 cup pure maple syrup
  • 1 tbl fresh lemon juice
  • 2 tbl coconut oil melted
  • 1 tsp cinnamon
  • Pinch sea salt
  • 1/4 cup unsweetened, shredded coconut

Instructions
 

  • Preheat oven to 350F
  • Slice the plums, pit and spread in a baking dish.
  • Sprinkle the plums with lemon juice, 1 tablespoon of the maple syrup
  • Mix the cashews, flour, coconut oil, maple syrup, vanilla extract and the cinnamon in a food processor. Add the oatmeal, coconut and the salt and pulse a few times.
  • Spread the crumble over the plums.
  • Bake for 20-25 minutes
