German Rotkohl (Sweet/Sour Red Cabbage)

German Rotkohl (Sweet/Sour Red Cabbage)

Ingredients
  

  • 1 red cabbage very thinly sliced
  • 1 yellow onion finely diced
  • 1 semi-tart apple peeled, cored and diced
  • 1/4 cup olive oil
  • 2-3 tbsp vinegar
  • 1 bay leaf
  • 1 tsp sugar
  • 1 tsp salt
  • 2 cups water

Instructions
 

  • Cook the onions in a pot until caramelized and just beginning to brown for 7-10 minutes.
  • Add the cabbage and cook for 5 minutes. Add the apple, water, bay leaf, vinegar, sugar and salt. Bring to a boil, reduce the heat to low, cover and simmer for 1 hour, stirring occasionally. Add more water if needed to cook the cabbage until dissolved.
  • Add more salt, sugar and vinegar to taste. Serve.
