Mustard Microgreen Omelette
Mustard microgreens have a spicy flavor that tastes like spicy mustard, but not overpowering. It's a perfect match with an omelette.
- 4 eggs
- 1 Tbsp parsely chopped
- 1 Tbsp olive oil
- Mustard microgreens
- 3 radishes sliced
- 2 spring onions sliced
- 1/4 cup grated cheese
- salt & pepper to taste
- Whisk eggs & parsley in a bowl till blended well; season with salt & pepper.
- Sauté onion, radishes, tomatoes & microgreens over medium heat olive oil with a pinch of salt till lightly cooked.
- Pour egg mixture over veggies cook omelette 2-3 minutes.
- Flip the omelette & cook another 1-2 minutes.
