Pumpkin Spice Smoothie

Made with a fresh baked pumpkin, this tasty smoothie will make any day a holiday!

Ingredients
  

  • 1/2 each fresh pumpkin personal size (mini)
  • 1 each avocado cut in half, seeded
  • 4 cups almond milk unsweetened
  • 4 tbsp hemp seeds
  • 6 each medjool dates
  • 4 tbsp pure maple syrup, honey, or agave
  • 1 tsp cinnamon
  • 1 tbsp turmeric
  • 1/2 tsp ginger fresh or powdered
  • 1/4 tsp nutmeg
  • 8 ice cubes Omit if you want a hot drink. Heat the almond milk prior to blending.

Instructions
 

  • Preheat oven to 350 degrees. Cut top off pumpkin, put back on and place on cookie sheet. Bake 30 minutes till soft
  • Allow pumpkin to cool and scoop out the seeds. (May be baked the day before. Keep in refrigerator up to 5 days)
  • Cut pumpkin in half and scrape the flesh out. Put into your Vitamix
  • Add the almond milk and the rest of the ingredients and blend till smooth. If too thick, add more milk.
  • Pour into mug or mason jar, add whipping cream and sprinkle with nutmeg. Maybe add a few pomegranate seeds to make it pretty!
