Arugula, Apple Beet Salad

Ingredients
  

  • 1 bunch arugula or a combination of arugula and spinach
  • 2-3 roasted beets rough chopped
  • 1 apple chopped (you could also use mandarins, oranges, or pears)
  • 1/3 cup walnuts chopped
  • Dressing
  • 3 tbl white wine champagne or apple cider vinegar
  • 1 tsp yellow mustard
  • 1 tsp maple syrup
  • 2 tbl water
  • sea salt and pepper to taste

Instructions
 

  • Put all of the salad ingredients a large salad bowl.
  • Whisk dressing ingredients in small bowl.
  • Pour over salad and toss.
  • Roasting beets: Preheat oven to 375 degrees. Rinse any dirt or debris from the beets. Put beets on a large piece of aluminum foil. (Optional: drizzle with olive oil, salt and pepper.) Fold foil over the beets and place in an oven-proof container. Roast for 30 minutes or until beets are tender. Cool and remove skins.
