Freshen up your day with the goodness of winter root veggies. Beets, carrots, and celery combined make for a salad that is filling and tasty!
Beet Carrot Celery Salad
- 2 beets peeled and boiled until tender
- 1 carrot peeled
- 1 celery stalk washed
- 1/4 cup scallions chopped
- 1 tsp red pepper flakes
- 1 Tbsp walnuts chopped
- 1 tsp sea salt
- 2 tsp olive oil
- Juice of ½ a lemon
- Slice all veggies julienne style then dice into small cubes. Place into a bowl.
- Add walnuts, oil, salt, pepper, and lemon juice. Mix and refrigerate at least 15 minutes before serving.
