Red Cabbage Slaw

Ingredients
  

  • 1 medium cabbage thinly sliced (a mandolin works nicely)
  • 2 small carrots grated (use a box grater or food processor)
  • 1 small red onion finely chopped or thinly sliced
  • 1/4 cup balsamic vinegar or apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons sugar or honey
  • 2 tsp. celery seeds
  • Salt & Pepper to taste

Instructions
 

  • In a medium serving bowl, combine veggies
  • In a microwaveable bowl, whisk together vinegar, sugar till dissolved. Slowly whisk in seeds, oil, salt & pepper to taste
  • Pour dressing in with veggies and toss to coat well. Cover and let sit at least 1 hour.
  • Remove from the fridge just before serving and give a good stir with a large fork. Enjoy!
