Superfood Spinach Salad w/Roasted Sweet Potatoes

1 small sweet potato (peeled) 1 tablespoonlime juice 1 teaspoonPaprika 6 cupsorganic baby spinach 1 cupCooked Quinoa 1 Avocado 1⁄3 cupGrape Tomatoes (sliced) 2 tablespoonsOlive Oil 1 tablespoonlime juice 1⁄4 teaspoonPaprika salt and pepper to taste

Ingredients
  

  • 1 sweet potato peeled
  • 1 tbsp lime juice
  • 1 tsp paprika
  • 6 cups organic spinach
  • 1 cup cooked quinoa
  • 1 avocado
  • 1/3 tomatoes sliced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 salt and pepper to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Peel and dice sweet potato into small cubes. In a medium bowl, toss the sweet potato with 1 tbsp lime juice and paprika.
  • Lay the sweet potato pieces flat on a baking sheet lined with parchment paper. Bake for 20 minutes or until lightly browned.
  • Just before the sweet potatoes are done, combine all other salad ingredients in a large mixing bowl.
  • Stir in sweet potatoes and serve!
