The scoop on Dandelion greens

Part of our job here at Daily Harvest is to help introduce the goodness of some unfamiliar (okay, weird) veggies! So this week, we threw some Dandelion greens in our boxes. However, we don’t want to leave you hanging in wonder and frustration.

Here’s some info about these super yet ordinary greens and (most importantly) how to fix them so you can start enjoying them and incorporating this healthy green into your diet.

Dandelion greens belong to the Sunflower family which include daisies and thistles. They may be a problem if you want a perfect lawn, but there are many benefits that dandelions have yielded over centuries. It’s been used as medicine since the 10th century.

Packed with Vitamin K (over 500% of the recommended daily value!), Vitamin A, and fiber, they are totally edible and good for you. In fact, they contain so many vitamins and minerals it’s considered one of the most highly recommended vegetables we can eat!

So now that we know that they’re good for us, let’s see the best way to enjoy them! Because the greens are bitter, they pair perfectly with rich flavors such as goat cheese, egg yolk, bacon, and potatoes.
