Yukon Mashed Potatoes

Ingredients
  

  • 1 lb yukon potatoes (cubed peeled if desired)
  • 1/4 cup milk (dairy free choice)
  • 1/3 cup butter
  • salt
  • pepper
  • 2 tbsp scallions (sliced optional)

Instructions
 

  • Add potatoes to a pot and cover with water. Add in a big pinch of salt and boil until tender. Drain the potatoes and return them to the pot.
  • Add the milk to the potatoes and using a potato masher, mash the potatoes until they are to your desired consistency.
  • Add in the butter, salt, pepper, and scallions if using. Stir to combine and serve.
